Tina Archuleta of Jemez Pueblo is the founder of Itality in Albuquerque, serving whole, plant-based Pueblo cuisine deeply rooted in Ital philosophy. After decades of cooking and confronting longstanding food access challenges, she built Itality to reconnect her community with nourishing traditions, promoting health, sustainability, and respect for the Earth.
